4th Semester in France
January 2013 saw the number of student going to France for their 4th semester jump to a fantastic number of 20!!! The 20 was made up of Hotel and Restaurant management students, Tourism management students and Culinary students. Nicole Chuchmach was the instructor for the full 8 weeks. Nicole taught two classes to the students and guided them through the program as faculty, adviser and sometime "mother hen". She incorporated the use of blackboard and facebook to engage the students and keep them informed of what was happening on a day to day basis. One of the issues this year was that the culinary students felt they did not use their cooking skills to the fullest. With that in mind, I am working with our partners - CEPA, to revamp the curriculum for the culinary program to include more cooking and baking opportunities. I am also incorporating a program specific online research project that will enhance the student learning specific to their program. The plan is once again to have 20 students participate in the 4th semester in France. We plan to have 6-8 culinary students and the balance from Hotel and Restaurant, Tourism and Event planning. This year we eliminated the paid tour guides in the various cities the student visited and incorporated a walking tour assignment into the Excursion course. This worked very well and students did a fantastic job in researching and leading the tours.
The volunteer day worked well this year and we plan to incorporate this into the 2014 program.
