My desire is still to teach until I am 60 years of age. That would mean I am done in 4 years.
I am currently the program coordinator for the Hotel and Restaurant Management program and the Food and Beverage Services Certificate program and the Tourism and Hospitality Management - Event Planning and the 4th Semester in France program and the 4th semester in Taiwan and the National Kaohsuing University of Hospitality and Tourism Exchange program. I have been a program coordinator since 2007. I am now starting into my 7th year as a program coordinator. I have been coordinating various program for different time periods.Therefore, I will be coordinator for one more year as my term is up in 2014. A decision will have to be made if I head back to my position as a faculty member for the final three years.
2013 - 2014 will see the use of technology in the class and in my everyday work increase. I will be using blackboard in my classes not only to inform students of activities, but to get them using the discussion boards, doing online quizzes, reading online articles and using Skpe to bring guest speakers into the classroom. I will be using videos to introduce my classes on blackboard and will be creating a "Popcorn video" for a student assignment. "paulandhiscamera" will also be a part of my HRT. 104 class and I will be putting together some information and instructional videos to assist in student success. I will also be using Camtasia in my instructional videos and will try to use "Explain Everything" an app on my iPad to answer student questions outside of class.
I will be creating marketing materials for the 4th semester programs in France and Taiwan and spending a good portion of my fall to promoting and signing students up for these opportunities
I hope to travel to France and Taiwan to work with our partners to enhance our study abroad programming for the future.
Every time I take a vacation, it is pro dev to me. I always take pictures of where I go and pass them on to faculty or use them in my classes. I talk to people at hotels, restaurants and on cruise ships to find out what is happening in the industry today. I still have friends in the industry and I speak to them on a regular basis to get a feel for the industry today. I am heading on a river cruise in July 2013 and Plan to take lots of pictures and videos to share with the students.
My goal is still to graduate outstanding young men and women to represent our school in the Hospitality industry.
Lastly, I will share with you my dream for space for the Hotel and Restaurant Management program. I dream of a new Bartending/Beverage lab that is a combination of classroom and actual mock bar for practice skills. I dream of a Hotel lab that has an actual mock up of a hotel room, theatre sitting and classroom for all the hotel course to be taught. I have a dream! (The dream is getting closer to reality with some space coming available in the college. I am excited at the opportunity of working on new space for the program.)

The School of Hospitality, Recreation and Tourism is currently exploring incorporating a live hotel into our programming. I will be involved with this exciting project over the next two years. There will also be an opportunity for new space here at the north campus by fall 2015 that i will be working on over the next year.
NEW: I will be mapping the Food and Beverage program this year. I hope to look at this program and change it to increase numbers for the future. I will also be working on the 4th semester curriculum for France and working with Nicole Chuchmach on the online Hotel Certificate program

2010 - I attended this conference (International Hotel, Motel and Restaurant Conference)in NYC last November. I find the Leadership in Hospitality conference before the trade show very interesting and it enables me to stay current with what is happening in the Hospitality Industry today
2010 - 2011 As a faculty group we have gone out and done many site visits to different types of hotels and restaurants. We have opportunities to talk with general mangers to discuss what is happening in the market today
2010 - 2011 More site visits - also this proves to be a great team building exercise for the Hospitality faculty.
2010 - Last year, Alister and I went to Johnson and Wales for a site visit of the Hospitality and Culinary programs. We have an articulation agreement with J&W for students to achieve their degree. We are also using some of their ideas for our own space needs in Hospitality, here at Humber.
2010 - 2011 I had an opportunity to visit the Lavazza office and training centre in New York. We have put in place a coffee and tea course in the Food and Beverage program in partnership with Lavazza. I hope to move this course into the Hotel and Restaurant program as well, in the near future.
